I made broccolini for the first time ever tonight - it was a hit! While I am a big broccolini fan, cooking it was unchartered waters for me. And guess what? It was easy-peasy and an instant favorite with Chris Corbin!
Nutritionally, broccolini is high in vitamin C but also contains vitamin A, calcium, folate and iron (thank you, Wikipedia). Chris calls it a nice combo of asparagus + broccoli.

Easy Peasy Broccolini
1 bunch of broccolini
2 cloves of garlic
Salt, pepper, chili flakes, olive oil
Place broccolini in a saute pan and cover with water.
Bring to a boil.
Add salt.
Boil 5-7 minutes until broccolini is a vibrant green and tender.
Strain Broccolini and remove from pan.
Over medium heat saute olive oil, minced garlic & pinch of red pepper chili flakes for 2-3 minutes.
Return broccolini to pan and serve.

In other news, my preparations for Ironman Arizona are coming together nicely. Last week I spent in San Francisco. I did some work with Saucony, then met up with training partner & friend extraordinaire Meredith Kessler! Not only did we have loads to catch up on, but we also had an Ironman to train for. I have a bunch of gratitude for my great friendship with Meredith, but she was also hostess with the mostess! Thanks MBK + AK! I will be back!! The week ended with Matty Dixon getting married up in Napa. Such an incredible wedding surrounded with great friends & family.
It was an excellent week in the city. Then back home to Montana for me. I won’t be here for long, though. I have another adventure on tap for Friday - stay tuned!!
