I needed to whip up dinner in a hurry and went with this:
Easy-Peasy Peanut Sauce
In a mason jar or tupperware combine:
1/2 c. coconut milk
4 tbsp peanut butter
1 tbsp sesame oil
2 tbsp soy sauce (or tamari for my gluten-free friends)
juice from 1/2 a lime
dash of hot sauce
sprinkle of brown sugar
sprinkle of ginger
sprinkle of crushed red pepper flakes
handful of chopped nuts
Shake vigorously. Voila!
Use 1/2 the sauce and store the rest in the fridge for later
This is a great sauce that you can pair with:
Grilled chicken, fish or tofu
Sauteed or steamed veggies topped with chopped peanuts & cilantro
Steamed rice, quinoa or rice noodles
